In the sun-baked lowlands of San Dionisio Ocotepec, the Madre-Cuishe agave is wild-harvested from nutrient-rich yellow soils after patiently maturing for 12 years. This emblematic regional varietal can only be tamed through traditional production methods honed over generations.
An Artisanal Journey of Fire and Time
After pit-roasting the mature piñas for 3-5 days over ocote wood, they are crushed using an ancient tahona millstone. Open-air fermentation of 10-12 days in pine vats allows only native yeasts to spark the transformation. Finally, double distillation in copper pot stills preserves every ethereal note.
