The piñas are cooked for 3-5 days in earthen pits over pine wood, imparting enticing smoky notes. After crushing with a tahona millstone, open-air fermentation of 10-12 days allows native yeasts to spark the transformation. Double distillation in copper pot stills refines the flavor.

Oak-Aged with an Iconic Oaxacan Accent

The hearts of this exceptional mezcal are then mellowed for 4-6 months in re-charred American oak barrels, achieving a rich caramel hue. Following traditional Oaxacan methods, agave worms are infused into each bottling, adding signature depth and complexity.
