An Artisanal Journey of Fire and Time

The piñas are cooked for 3-5 days in earthen pits over pine wood, imparting rich smoky complexity. After crushing with an ancient tahona millstone, open-air fermentation allows native yeasts to spark the transformation for 10-12 days. Double distillation in copper pot stills refines the intense agave essence.

Mellowed by Oak and an Iconic Oaxacan Accent

The intense heart of this exceptional mezcal is then gently rested for 4-6 months in re-charred American oak barrels. This patient aging process lends a delightful caramel hue and slightly smoother mouthfeel. In keeping with Oaxacan tradition, agave worms are infused to add signature depth.
