This joven (unaged) mezcal is the embodiment of tradition - a pure, untamed expression of the venerable Espadin agave. Exclusively cultivated in the diverse soils and terrains of Wahaka's San Dionisio Ocotepec estate, it marks the starting point for an unforgettable journey into the world of nuanced, artisanal mezcal.
An Artisanal Journey Rooted in Ritual
The Espadin piñas are harvested after patiently maturing for 7-8 years, then slowly cooked for 3-5 days in conical earthen pits heated by smoldering ocote wood. This ancient ritual imbues the agave with its signature smoky essence. The roasted piñas are then crushed using a traditional tahona millstone to extract the precious nectar before fermentation of 10-12 days in pine vats with only native airborne yeasts. Double distillation in copper pot stills allows the agave's vivid flavors to shine.

On the nose, this joven mezcal captivates with bold aromas of woodsmoke, fresh herbs, citrus zest and subtle minerality. The palate ventures into layers of roasted agave, tropical fruits, green pepper and lingering earthen notes, heading into a dry, subtly smoky finish with hints of sea salt.
