Honoring Traditional Methods
At Wahaka, we honor the time-tested methods of mezcal production:
- Cooking: Our agave is cooked for 3-5 days in an earthen pit using ocote (pine) wood, imparting a signature smoky flavor.
- Crushing: The cooked agave is crushed with a tahona, a traditional circular millstone, to extract its precious juices.
- Fermentation: The spirit undergoes a 10-12 day fermentation process in pine vats, utilizing wild yeast native to the region.
- Distillation: Twice distilled in copper stills, our mezcal achieves a perfectly balanced and refined taste.
