Sotol Coyote Durango Blanco
Experience the Gentle Spirit of the Durango Desert.
From the skilled hands of Maestro Sotolero Gerardo Ruelas comes Sotol Coyote Durango Blanco, a unique expression of the desert's bounty, offering a softer and more nuanced profile. Crafted in Durango, this sotol embodies a traditional approach. The Dasylirion (Coyote variety) is ground using a tahona (stone mill), baked in a conical oven, and naturally fermented in wooden tubs with pure well water. This meticulous process yields a spirit with sweet and mineral characteristics that beautifully represent the region.
Tasting Notes:
- View: Presents a crystal clear appearance with bright silver reflections, indicating its purity and vibrant character.
- Nose: The aroma is inviting and complex, revealing notes of nuts, including walnuts, hazelnuts, and almonds, alongside the sweet fragrance of pears, peaches, and dehydrated chabacanos (apricots). A subtle smoky undertone adds a layer of intrigue to this aromatic bouquet. Hints of seeds further enhance its earthy complexity.
- Taste: Sotol Coyote Durango Blanco is remarkably kind and gentle on the palate. It beautifully confirms the aromas perceived on the nose, delivering a harmonious blend of the nutty and fruity notes. A distinct sweet sensation, reminiscent of crystallized figs and nutmeg, emerges, creating a unique and delightful experience.
- Finish: The finish is clean and lingering, with the sweet and nutty notes gently fading, leaving a pleasant mineral whisper.
- Pairing Suggestions: Sotol Coyote Durango Blanco's balanced and slightly sweet profile makes it an excellent companion to rich and flavorful dishes. It beautifully complements chiles en nogada, mole almendrado, and creamy dishes like cream of walnut soup. It also pairs exceptionally well with a selection of cheeses and cold meats, enhancing their savory notes with its subtle sweetness and complexity.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
