The agave used in Rufina Azul is of the mid-high Jima Tequilana variety, known for its remarkable flavors and characteristics. It is harvested at the optimal maturity of 7-8 years as capon plants, ensuring the agave has developed rich flavors and high sugar content.
Rufina's final product is a testament to the dedication and craftsmanship of the community, with each small batch (ranging from 120 to 250 liters) reflecting the unique qualities of the agave and the season in which it was distilled. However, due to the challenges of maintaining consistent temperature during shipping, we exclusively offer in-store pickup for our craft beers.
