PM Spirits Destilado de Agave Espadín

From the ancient hills of Zimatlan de Alvarez, Oaxaca, comes a spirit that transcends certification – a collaboration between PM Spirits' Nicholas Palazzi and 5 Sentidos' Jason Cox that captures the raw essence of traditional mezcal craftsmanship.

Under the skilled hands of Maestro Mezcalero Rene Parada Barriga, wild Espadín agave hearts are slowly roasted in earthen ovens, their sugars caramelizing beneath layers of soil and stone. The roasted piñas then meet their destiny in pine fermentation vats, where pure well water and wild yeasts transform them through natural, unhurried fermentation. Each precious drop is then double-distilled in copper alembic stills, yielding just 563 liters of this extraordinary spirit.

Though technically labeled as "Destilado de Agave" due to its uncertified nature, this is mezcal in its purest, most ancestral form. At a formidable 61.1% ABV, it delivers an experience akin to the coveted Puntas – the prized "head" cuts of traditional mezcal distillation. The palate erupts with tropical fruit punch notes while subtle smoke weaves through layers of ripe agave funk, creating a complex tapestry of flavor that speaks to both tradition and artistry.

This is more than a spirit – it's a liquid testament to mezcal's uncertified traditions, where authenticity transcends paperwork and true craft knows no bounds.
