Pal’alma De Castilla is an extraordinary expression of Northern Mexican distilling traditions, hailing from the rugged terrain of Santiago, Nuevo León. Crafted by esteemed maestro Jorge Torres, this mezcal highlights the Agave americana, locally known as "De Castilla", a variety prized for its ability to produce spirits with profound depth and a distinct regional character. 

True to the Pal’alma mission, curator Erick Rodriguez (the "Indiana Jones of Mezcal") traveled deep into the freshwater canyons of Nuevo León to bring this rare traditional spirit to the global stage. It is a testament to the mastery of heritage distillation and the innovative adaptations required by the local climate.

The Pulque Fermentation Process

What truly sets this mezcal apart is its unconventional fermentation method, born from the necessity of the colder Northern climate. In a departure from standard practice, Jorge Torres uses pulque—the ancient, fermented sap of the agave - in place of water during fermentation. The final mix consists of approximately 40% roasted agave fiber and a generous 60% fresh pulque. This high concentration of fermented agave sap acts as a natural starter, lending the spirit a strikingly distinctive aroma and a complex, creamy lactic quality that is virtually unmatched in other mezcal categories. 

Tasting Notes

  • Aroma: A bold and complex nose that immediately signals its unique origins. Expect notes of overripe tropical fruit, sourdough bread, and a subtle floral sweetness from the De Castilla agave, underpinned by a distinct earthy funk from the pulque.
  • Palate: Rich and high-density. The palate offers a beautiful balance of savory and sweet, featuring flavors of roasted agave, green herbs, and a velvety, yogurt-like tang.
  • Finish: Long and incredibly smooth. It leaves a lingering impression of sweet mineral water and a soft, refined smoke that highlights the purity of the mountain-grown agave.
