What truly sets Pal’alma De Castilla apart is the unconventional use of pulque, a traditional Mexican alcoholic drink made from the fermented sap of the agave plant. In this colder climate, pulque is used in abundant quantities during fermentation in place of water. This final mix consists of approximately 40% roasted agave fiber and a generous 60% pulque. This unusual method of fermentation lends a strikingly distinctive aroma and flavor to the mezcal, setting it apart from others in the category.
