Curated by the "Indiana Jones of Mezcal," Erick Rodriguez, this expression is part of the Almamezcalera / Pal’alma experimental series, where heritage distillation meets innovative post-distillation refinement.

Rather than a simple infusion, this spirit is aged in glass or rested in specialized containers seasoned with the essential ingredients of traditional Mexican coffee preparation. It represents a sophisticated exploration of how agave can harmonize with the deep, earthy tones of roasted beans and warm spices. 

The "Café de Olla" Profile

Traditional Café de Olla is a staple of Mexican clay-pot brewing, characterized by piloncillo (unrefined cane sugar), cinnamon, and, occasionally, orange peel or cloves. Pal’alma captures this essence through a meticulous resting process that allows the agave spirit to absorb these aromatic oils without losing its own structural identity.

Tasting Notes

  • Aroma: An immediate and nostalgic bouquet of freshly ground dark roast coffee and Mexican cinnamon (canela). Beneath the spice, you will find the sweet, vegetal scent of cooked agave and a hint of caramelized brown sugar.
