- A Journey to San Baltazar Guelavila: Nestled in the Tlacolula district, San Baltazar Guelavila is renowned for its fertile, limestone-rich soil, creating the perfect environment for cultivating agave. The high elevation of over 5,000 ft contributes to the development of agave with concentrated sugars, resulting in a refined Espadín of remarkable character and extraordinary length.
- Artisanal Mastery by Don Goyo: Guided by the experienced hands of Maestro Mezcalero Don Goyo, each batch of mezcal is a testament to the beauty of natural processes. The agave is cooked in a traditional conical earthen oven and milled with a horse-driven stone tahona, preserving the soul of artisanal mezcal making.
- Unique Fermentation & Distillation: The mezcal’s distinct profile is shaped by natural fermentation in open-air wooden tanks, known as tinas. The presence of roses and lime trees, nurtured alongside the tinas by Don Goyo, adds a unique touch to the fermentation process. Distilled twice using traditional copper pot stills, the mezcal reaches a perfect 47% ABV, offering a pure and authentic taste of Oaxaca.
