In a display of true craftsmanship, the agave is milled by hand using an ax, a labor-intensive process that ensures a personal touch in every batch. The fermentation is 100% natural, occurring in rectangular vats set at ground level. These vats are meticulously monitored to maintain a stable, earth-bound temperature, allowing for the development of the rich, complex profile that defines the Mezcal Amarás Logia philosophy.
