Sotol La Higuera Leiophyllum is a unique expression of the wildcrafted Dasylirion leiophyllum, meticulously produced in Aldama, Chihuahua, by the esteemed Master Sotolero Gerardo Ruelas. Embracing time-honored methods, the leiophyllum is cooked in an outdoor conical oven heated by wood and rocks, infusing it with subtle earthy undertones. The cooked plants are then painstakingly milled by hand with axes. Natural fermentation occurs with wild, ambient yeasts in 1,000-liter pine vats, allowing the local microflora to shape its distinct character. Finally, the sotol undergoes double distillation in copper alembic stills, resulting in a spirit that is both rustic and surprisingly complex.
