A rare gem from the Sotol universe, Carnel is a transcendent expression of Mexico's most mystical artisanal spirit. Crafted from wild-harvested Dasylirion wheeleri plants, this pechuga-style sotol undergoes an ancient, sacred production method virtually unchanged for centuries.
The hearts are slowly roasted over smoldering oak embers in a traditional pit oven, concentrating their vegetal essences. After meticulous hand-milling with axes and knives, an unhurried fermentation of up to two weeks extracts every nuance.
The magical alchemy continues as the fermented mash ascends through three sacred distillations in a copper pot still, refining it to its sublime essence. True to the venerable pechuga method, a wild turkey breast is suspended in the still to contribute faint, savory notes.
