Flor Del Desierto Carnei is one of the most singular and complex spirits in the world. While "Pechuga" (a redistillation with fruits and protein) is a famous tradition in Mezcal, it is incredibly rare in the world of Sotol.
Crafted by the legendary Maestro Sotolero José "Chito" Fernandez Flores in the mountains of Madera, Chihuahua, this expression is based on the "Sierra" style. During the third and final distillation, a raw cut of local venison (deer meat) is suspended in the still along with a bounty of seasonal fruits and spices. The result is a savory, opulent masterpiece that bridges the gap between a rugged desert spirit and a sophisticated digestive liqueur.
An Artisanal Trio of Distillations
- The Foundation: 100% wild-harvested Dasylirion Wheeleri, aged 18–22 years in the high-altitude forests of the Sierra Madre.
- Traditional Cooking: The plants are roasted in a shallow pit oven fueled by willow and oak firewood, then hand-milled with an axe and a knife.
- The Pechuga Infusion: For the third distillation, Chito adds a unique blend of walnuts, star anise, orange, raisins, and apples, while the venison hangs in the upper chamber of the copper still. The steam passes through these ingredients, capturing their essential oils and savory proteins.
