Dos Boots Mezcal Ancestral Castilla is a rare triumph of traditional spirit-making—a rugged yet sophisticated expression hailing from the high-altitude slopes of the Oaxacan Central Valleys. Harvested by hand at approximately 4,000 feet, the exotic Castilla agave—a close but distinct relative of the Espadín—is celebrated for its immense sugar concentration and waxy, rich character.

Under the guidance of Maestro Mezcalero Israel Palestino and his team, this spirit is crafted using the Ancestral method, as defined. This labor-intensive process eschews modern machinery entirely. The agave is roasted in earthen pits, hand-milled (often with wooden mallets), and, most importantly, fermented and distilled in small clay pots (ollas de barro). This ancient technique yields a spirit of exceptional texture and depth, balancing the 100-proof intensity with the porous, mineral-softening influence of the clay. 

Tasting Notes

  • Nose: Deeply earthy and aromatic. The clay pot distillation is immediately evident, offering scents of wet brick, rain-soaked slate, and damp forest floor. These grounding notes are lifted by the Castilla agave’s natural perfume: ripe tropical fruits (dried mango or pineapple), raw honey, and a hint of soft confectioner's sugar.
  • Palate: Rich, oily, and coating. Despite the robust 100 proof, the heat is tempered by a luxurious, creamy mouthfeel unique to clay distillation. The palate is a complex interplay of savory and sweet: roasted chestnuts and dark cocoa merge with bright notes of lime zest and a distinct, chalky minerality. The "exotic" nature of the Castilla shines through with a waxy, almost buttery sweetness.
  • Finish: Long and evolving. The finish is remarkably clean, leaving a lingering warmth of cinnamon spice, dried herbs, and a final whisper of dusty earth that speaks to the terroir of Jayacatlán. 

Serving Recommendation

As an Ancestral spirit, this bottle represents the pinnacle of mezcal craftsmanship and should be treated with reverence. The Vessel: Serve neat in a wide clay copita or a snifter. The clay vessel complements the production method, while a glass snifter will highlight the fruitier aromatics.

The Ritual:

Let the spirit breathe in the glass for 10–15 minutes before the first sip. This allows the high-alcohol vapors to dissipate, revealing the delicate fruit and floral notes hidden beneath. Pairing: Ideal with Oaxacan chocolate, stone fruit desserts, or simply enjoyed on its own as a meditative pour.
