Caballito Cerrero Destilado de Agave - El Caballito Cerrero, El que no necesita herraduras [The Untamed Horse, the one that does not need horseshoes], a Caballito Cerrero is a wild, strong animal that can not be tamed.

A family-owned distillery passed down for sixteen generations. In 2006, UNESCO certified the ancient distillation site as the oldest archaeological site of agave distillation existent in Mexico, dating back to at least the year 1600. The Santa Rita Fabrica, the current distillery, was built in 1873.

Produced in Amatitán, Jalisco, this limited-batch agave spirit is additive-free and well-known in both the tequila and mezcal communities. The family was instrumental in building the Consejo Regulador del Tequila (CRT) process but became disillusioned when many recommendations were ignored. Thus, they no longer certify their spirits and stopped using the word Tequila on their bottles in 2018.

Currently, the Jiménez family continues to manufacture Caballito Cerrero in the Santa Rita Factory with the designation of Destilado de Agave with the tradition taught to them by their ancestors, who were Mezcal and Tequila producers and Agave growers, for fifteen generations, a tradition that is constituted by absolute respect to the quality of a product 100% of Agave, doing it with the strictest surveillance of processes and using mature and sazon (stage that the agave acquires a few years after it quiota) agaves and only of the region of Amatitán. The family only uses agaves grown on their land, including maguey Azul (Agave tequilana) and maguey Chato (Agave angustifolia). 

Caballito Cerrero is the result of knowledge of generations and the geographical conditions of the Santa Rita Factory, located in a fertile ravine and fed by a spring of natural mineral water that is used for cooking, fermenting, and distilling; all this makes Caballito Cerrero a product of unique and unparalleled quality.
