15 Generations of Mezcaleros

The Jimenez family maintains absolute respect for the quality of the 100% agave product that they produce, using only mature agaves from the Amatitán region, having productions with Blue Agave Tequilana Weber and with Agave Angustifolia as their ancestors did. Caballito Cerrero is the result of the knowledge acquired by the Jimenez family through fifteen generations of producers of vino mezcal, tequila and agave distillate, the geographical conditions of the Santa Rita factory and the effort of a family to stay true to their convictions and traditions.

Craftsmanship:

  • Cooking: The agave hearts were slowly cooked for 24 hours in a traditional brick steam oven.
  • Resting: Following cooking, the agave rested for an extended 24-36 hours. Extraction: The cooked agave was then processed through a double pass mill, achieving a must with a Brix level of 11.
  • Yeast: Fermentation was carried out using a combination of wild and proprietary yeasts, contributing to the spirit's unique character.
  • Water Source: Only natural spring water was used in the distillation process.
  • Distillation: The spirit was double-distilled in a combination of stainless steel and copper pot stills. Barrel: This exceptional Añejo rested for 13 months in Barrel No. 14.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two.
