This rare expression from the historic Santa Rita Fábrica is the "cut" taken from the very beginning of the distillation run, where the most volatile and aromatic compounds reside. Bottled as a Destilado de Agave, this spirit captures the wild, uncompromised heart of the Agave angustifolia (Maguey Chato) at a formidable high proof.
Produced in Amatitán by the sixteenth-generation Jiménez family, this is an additive-free masterpiece that refuses to be tamed by industrial standards or modern labeling requirements.
The Craft
The Agave: 100% estate-grown Maguey Chato (Agave angustifolia), harvested only at peak "Sazón" maturity to ensure the most complex sugar profile possible.
- The Water: Fermented and distilled using the natural mineral spring water from the distillery’s own ravine.
- The Cut: Unlike standard bottlings, the Puntas cut is limited to a small fraction of the distillation, capturing an extraordinary concentration of essential oils and agave essence.
Tasting Notes
- ABV: Typically 60% – 65% (High Proof / Still Strength)
- Aroma: An explosive and complex bouquet. It opens with intense notes of roasted agave, tropical fruit (green mango and pineapple), and a distinct mineral strike. Beneath the fruit lies a rustic, savory edge reminiscent of black pepper, damp earth, and woodsmoke.
- Palate: Powerful and coating. Despite the high alcohol content, the mouthfeel is remarkably silky and oily. Flavors of sweet cooked agave and bright citrus are balanced by an herbaceous "green" quality and a salty, briny undertone characteristic of the Amatitán terroir.
