Cascahuín Añejo (44% ABV)

Produced at NOM 1123 in El Arenal, Jalisco, this expression represents the perfect intersection of traditional brick oven roasting and careful maturation. The extra 4% ABV compared to standard bottlings provides a more concentrated flavor profile and a viscous, velvety mouthfeel that carries the complex barrel notes through a long, dry finish.

Production Details

  • Agave: 100% Blue Weber (Tequilana Weber)
  • Cooking: Traditional masonry ovens for 72 hours
  • Extraction: Roller mill
  • Fermentation: Wood and cement tanks with fibers
  • Distillation: Double distilled in stainless steel pot stills with copper coils
  • Aging: 14 to 16 months in spent American Oak barrels (typically bourbon) 

Tasting Notes

  • Appearance: Pale straw to honey gold. The color is lighter than many commercial Añejos, indicating a lack of additives or caramel coloring. Thick, slow-moving legs on the glass.
  • Aroma: The nose leads with cooked agave and a distinct "wet stone" minerality. As it opens, secondary notes of toasted almond, light vanilla, and dried citrus peel emerge. There is a faint, savory hint of olive brine that is characteristic of the Cascahuín distillery.
  • Palate: Initially spicy and bold due to the higher proof. The sweetness of the agave is balanced by the dry tannins of the oak. You will find layers of black pepper, cinnamon, and a touch of dark chocolate. It avoids the "cloying" syrup texture of many aged tequilas, remaining bright and herbaceous.
  • Finish: Extremely long and warming. The heat of the 44% ABV lingers alongside a savory, earthy quality and a final puff of oak smoke. 

Expert Tip:

To fully appreciate the complexity of the 44% ABV, let this sit in a Glencairn or champagne flute for 10 minutes before tasting. The higher alcohol content benefits significantly from oxidation.

What is the difference between Tequila & Mezcal?
