Cabal Extra Añejo Tequila

Amatitán, Jalisco, México

The Botella de Caballo Extra Añejo represents the pinnacle of the Cabal collection, a spirit defined by patience and the rich heritage of Los Valles. Aged for a full 36 months in oak barrels, this expression amplifies the foundational qualities of their award-winning Añejo, evolving into a tequila of unparalleled depth.

Presented in the brand's signature horse-head bottle, it serves as a tribute to the traditions of charrería and the meticulous craftsmanship of the Montes and Hernandez families. The production remains faithful to the Amatitán roots.

Under the guidance of Maestro Jimador Eduardo S. Lara and Maestro Tequilero Alvaro Montes, the agaves are slow-baked in a 32-ton masonry oven for 42 hours. Following a 72-hour natural yeast fermentation and double distillation, the spirit is aged for 3 years. This extended rest allows the vibrant, vegetal Highland agave to marry perfectly with the deep, structural influence of the wood.

Tasting Notes

  • Aroma: A seductive and rich bouquet that opens with deep butterscotch and toasted oak. Beneath the sweetness lies the soul of the spirit, warm, honeyed notes of cooked agave and a hint of dark chocolate.
  • Palate: The mouthfeel is luxurious and multi-layered. Initial flavors of sweet oak and creamy butterscotch are balanced by a sophisticated crack of black pepper. As it sits on the tongue, notes of vanilla bean and roasted nuts emerge, grounded by the persistent presence of mature agave.
  • Finish: Exceptionally long and complex. The finish lingers with a harmonious blend of oak tannins, rich vanilla, and a final, sweet whisper of cooked agave, inviting another sip.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
