Wild Common Mezcal Ensamble

A Masterful Harmony of Artistry and Terroir

Wild Common Mezcal Ensamble is a liquid tribute to the rugged landscapes of San Luis Del Rio, Oaxaca. Crafted by the visionary Maestro Mezcalero Joel Velasco, this expression is a meticulous blend of mature Espadín and Tobalá agave. By marrying the structural elegance of Espadín with the wild, floral complexity of Tobalá, Velasco has created a spirit that captures the heartbeat of his community.

Following the Wild Common ethos of "Nothing Added, Nothing Lost," this Ensamble is produced using ancestral techniques—from earthen pit roasting to open-air fermentation in pine vats—ensuring every drop is an honest reflection of the land.

Tasting Notes

This Ensamble is a revelation, offering a balanced "symphony" of flavors that evolve beautifully from the first sniff to the final lingering note.

  • Aroma: A bright, inviting bouquet of green citrus zest and fresh garden herbs. Beneath the freshness lies a subtle, creamy sweetness reminiscent of coconut and a whisper of woodsmoke from the earthen roasting pit.
  • Palate: The entry is exceptionally clean and balanced. The Espadín provides a structured foundation of citrus and minerals, while the Tobalá takes center stage in the mid-palate, introducing a rich, warm, buttery texture.
  • Finish: A graceful and delicate finale. The buttery notes transition into soft floral layers and a gentle, natural sweetness that lingers long after the glass is empty.

The Experience:

Whether you are an aficionado of rare agaves or a newcomer to the category, the Wild Common Ensamble is remarkably approachable yet profoundly complex. It is an unapologetic expression of Oaxacan heritage, designed for those who value authenticity in every sip.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
