For the Discerning Blanco Lover: Siembra Valles Tequila Lowlands

Prepare for a revelation.

Siembra Valles is the passionate creation of David Suro, the visionary founder of Siembra Azul, born from a desire to craft exceptional tequila at his inaugural distillery visit – the esteemed Distileria Cascahuin (NOM 1123). This is not just another Blanco; it's a paradigm shift, celebrated as one of the most remarkably round, fruity, soft, and plump Blanco tequilas to emerge in years.

Sourced from the mineral-rich agave of the lowland Valles region, specifically El Arenal, Jalisco, where volcanic soils impart a unique terroir, Siembra Valles embodies the essence of its origin. The mature agave is slow-roasted for up to 72 hours and meticulously shredded four times to maximize the extraction of its precious sugars. Fermentation is a carefully controlled process, taking place in a thoughtful combination of traditional Mamposteria (a stone structure enclosed by fiberglass) and modern stainless steel tanks. The distillation process is equally deliberate. The tequila undergoes an initial distillation in stainless steel with a copper coil, followed by a slower, more nuanced second distillation in small copper pot stills. Bottled unaged, Siembra Valles captures the pure, vibrant spirit of the agave.

Tasting Notes:

  • Aroma: An invitingly sweet and fragrant nose bursts forth with prominent notes of cooked agave, reminiscent of roasted pineapple and sweet potato. Subtle hints of citrus blossom and a touch of fresh herbaceousness add brightness and complexity.
  • Palate: The palate is exceptionally smooth and generous, delivering a creamy, almost velvety texture. The promised sweet agave flavors take center stage, beautifully complemented by a roasted richness. A lively white pepper spiciness emerges, providing a delightful counterpoint and ensuring a balanced and engaging experience. Subtle earthy undertones hint at the volcanic soil of its origin.
  • Finish: The finish is clean and lingering, leaving a pleasant warmth and a final flourish of sweet agave and delicate peppery notes. The softness and plumpness experienced on the palate extend through to a satisfying conclusion.

Experience the Purity of the Lowlands: Siembra Valles Tequila Lowlands is best enjoyed neat or with a single ice cube to fully appreciate its nuanced flavors and exceptional texture. It also elevates classic Blanco cocktails with its unparalleled smoothness and vibrant agave character. Discover the artistry of David Suro and the unique terroir of the Valles region in every sip.

Frequently Asked Questions

Is all your inventory online?

We try to keep the store as updated as possible, but we always get new shipments. So if you don't see what you are looking for, send an email, and we'll check to see what Moose is hiding in the back room.

Why is beer available as in-store pick-up only?

Our temperature-controlled storage systems preserve beer's quality and flavor until pickup. By maintaining precise refrigeration, we protect each batch's unique characteristics and ensure customers receive the freshest possible product.

However, due to the challenges of maintaining consistent temperature during shipping, we exclusively offer in-store pickup for our craft beers.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
