A Taste of History: Siembra Valles Ancestral Tequila

Embark on a sensory journey through time with Siembra Valles Ancestral Tequila. Born from a deep reverence for tequila's origins and a yearning to rediscover its authentic essence, this exceptional spirit celebrates the traditions and flavors of a bygone era. Siembra Valles Ancestral offers a glimpse into what tequila once tasted like, crafted with techniques untouched by modern machinery.   From the pesticide-free, volcanic-rich soils of the Tepezapote and Mesa Del Charco ranches in the valleys of Arenal, the Rosales family's skilled jimadores cultivate pristine blue agave. This unique lowland terroir imparts distinct mineral, peppery, and citrus characteristics to the final expression.  

Honoring ancient methods lost to time, the mature piñas are slowly roasted over wood and lava rocks in an earthen pit, reminiscent of traditional mezcal production. The cooked agave is then meticulously broken down using wooden mallets – a labor-intensive extraction method predating even the Tahona, with roots stretching back at least 300 years.  

The distillation process further distinguishes this remarkable tequila. The first distillation occurs in a traditional copper pot alembic, ensuring foundational quality. The second distillation, however, takes an unprecedented turn, utilizing a Filipino-style alembic crafted from pine wood – a method entirely unique within the tequila industry. While copper typically preserves flavor and enhances heat transfer, the pine alembic gently infuses subtle wood notes while preserving the spirit's inherent character, resulting in a Blanco unlike any other.

Tasting Notes:

  • Aroma: An intriguing and complex nose unfolds with prominent notes of smoky cooked agave, a direct result of the pit roasting. Layers of earthy minerality mingle with bright hints of lime zest and a subtle herbal undertone. A delicate woody nuance from the pine distillation adds an unexpected and captivating dimension.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
