The Madrecuishe (Agave karwinskii) is a wild, stalk-growing agave that thrives in the dry climate of the Central Valleys. Known for its dense, fibrous core and high mineral content, it produces a mezcal that is celebrated for its rigid structure and complex botanical profile. In the hands of the Sánchez Parada family, this challenging agave is transformed into a sophisticated spirit using traditional artisanal methods: earthen pit roasting, tahona grinding, and open-air fermentation.

Tasting Notes

  • Aroma: The nose is strikingly clean and mineral-driven, reminiscent of wet slate and cooling rain on dry earth. Subtle floral notes of jasmine and dried herbs emerge as the spirit breathes.
