This 200ml expression is the perfect introduction to one of the most challenging and rewarding agave varieties in existence. Produced in the village of Candelaria Yegolé, this spirit is a testament to the skill of Maestro Mezcalero Rómulo Sánchez Parada, a true pioneer who was among the first to successfully master this wild agave.
Agave convallis, known locally as Jabalí (wild boar), was traditionally used as living fences to protect livestock because of its jagged, razor-sharp spines. For generations, it was avoided in distillation due to its high concentration of saponins, the same natural enzymes found in rye that cause intense foaming during fermentation and distillation. Rómulo overcomes these "wild" tendencies using a custom, taller still that functions similarly to a refrescadera, carefully managing the foam to produce a spirit of rare elegance.
Tasting Notes
- Aroma: The nose is wild and multi-layered, opening with a bright burst of orange zest and flinty minerals. As it rests, deeper notes of overripe tropical fruit and a distinct, "feral" meatiness emerge, showcasing the untamed nature of the agave.
- Palate: On the tongue, the power of the Jabalí is immediate but incredibly sophisticated. The initial impact of exotic fruit and sweet agave is balanced by a savory, earthy complexity. While lesser versions of this varietal can lean too heavily into "funk," Rey Campero maintains a structured, silky mouthfeel.
