Olmeca Altos Añejo

Olmeca Altos Añejo is a multi-award-winning tequila crafted for those who appreciate the depth of a matured spirit without losing the vibrant soul of the agave. Created through a unique collaboration between Maestro Tequilero Jesús Hernández and world-renowned UK bartenders Henry Besant and Dre Masso, this 100% Blue Weber Agave tequila is engineered for both sophisticated sipping and high-end cocktails.

Produced at the Destilería Colonial in Los Altos, Jalisco, the agave is slow-cooked in traditional brick ovens and partially crushed using the ancient Tahona stone method. This labor-intensive process ensures a rich, textured mouthfeel that stands up beautifully to its time in the barrel.

The Aging Process

While many tequilas move quickly through production, Altos Añejo is aged for 18 months in small, 200-liter former bourbon oak barrels. This extended rest—well beyond the one-year legal requirement for the Añejo category—allows the spirit to develop a complex, woody character while smoothing out the natural spice of the highland agave.

Tasting Notes

  • Appearance: A deep, brilliant amber with coppery reflections and slow-moving "tears" on the glass, indicating a rich body.
  • Aroma: The initial nose is dominated by sweet, cooked agave, quickly followed by the classic bourbon-barrel influence of toasted oak, vanilla, and roasted almonds. Subtler notes of dried apricot and a hint of nutmeg emerge as it breathes.
  • Palate: A velvety, full-bodied entry. The sweetness of the agave is perfectly balanced by flavors of dark butterscotch and cacao. There is a distinct "toasty" quality from the Tahona-crushed fibers that mingles with a gentle peppery spice.
  • Finish: Long, warm, and remarkably smooth. It leaves a lingering trail of caramelized honey and a soft, smoky oak resonance. 

Serving Recommendation

Because of its rich profile, Olmeca Altos Añejo is best enjoyed neat or over a single large ice sphere to allow the vanilla and oak notes to bloom. It also serves as a premium base for a "Tequila Old Fashioned," where its bourbon-barrel heritage creates a natural bridge for traditional whiskey lovers.
