Legendario Domingo Espadín:

A Journey to San Luis del Río

Legendario Domingo Espadín is the flagship expression of the brand’s Oaxacan heritage. Crafted in the iconic mezcal-producing village of San Luis del Río, this spirit is a masterclass in balance, showcasing the elegance of the cultivated Agave angustifolia (Espadín).

Produced by the Velasco family, this mezcal is a "sessionable" spirit, approachable enough for the curious newcomer, yet complex enough to satisfy the most seasoned mezcalero.

Artisanal Craftsmanship

Adhering to centuries-old traditions, every bottle is a product of patience and respect for the land:

  • Agave Selection: 100% Espadín agave, matured for 8 to 9 years at an elevation of 900 meters.
  • Earth-Friendly Cooking: The agave hearts (piñas) are roasted in underground conical ovens fired with local oak and tepehuaje wood, sourced exclusively from fallen, dead trees to preserve the forest.
  • The Tahona Method: The cooked agave is crushed using a traditional horse-drawn stone mill (Tahona).
  • Natural Fermentation: Wild, indigenous yeasts transform the sugars in open-air pine vats over a 10-day period.
  • Copper Distillation: Double-distilled in copper pot stills to refine its character while retaining the soul of the agave.

Tasting Notes

Legendario Domingo Espadín is celebrated for its bright, expressive nature and restrained smoke.

  • Nose: Bursting with fresh agave sugar, lemon peel, and hints of ripe kiwi. Palate: A vibrant entry of mixed citrus, specifically orange rind, layered over tropical fruits like papaya and green banana.
  • Mouthfeel & Finish: A smooth, medium-bodied spirit with a distinct mineral backbone and a touch of salinity. The finish is clean and warm, with a delicate, lingering smokiness.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
