Lágrimas del Valle La Sabina Plata Tequila 2024

Lágrimas del Valle, or "Tears of the Valley," is a vintage, single-estate tequila that masterfully captures the unique terroir of Guanajuato. This high-elevation ranch, located in La Romita, is surrounded by mountains and yields agave with a distinctive character. Produced in collaboration with the Rosales family of Tequila Cascahuín, this additive-free tequila is a testament to traditional craftsmanship and a celebration of the rich complexity of the blue Weber agave.

The tequila is a blend of modern and traditional production methods, with 70% of the agave processed by roller mill and 30% crushed by a tahona. The juice is then fermented separately in both stainless steel and open-air wooden tanks with agave fibers, before being double-distilled and bottled at a robust 46% ABV (92 proof), offering a full-bodied and authentic expression. This unique, intermittent cooking method—where agaves are cooked for 8 hours a day over four days—allows for deep, layered flavor development.

Tasting Notes:

  • Nose: An incredibly inviting and complex aroma of rich, cooked agave immediately greets the senses, mingling with bright green herbs and hints of palo santo. There's a subtle minerality reminiscent of chalk, along with notes of roasted parsnip and guava, creating a unique and savory profile.
  • Palate: The palate is clean and layered, starting with a powerful, savory cooked agave presence. This is quickly followed by vibrant, crisp citrus and a gentle black pepper spice that builds pleasantly on the tongue. As the tequila develops, notes of mint, sweet potato, and fresh-baked bread emerge.
  • Finish: The finish is long, clean, and satisfying. The agave sweetness and bright citrus linger, accompanied by a persistent minerality. A delicate warmth from the high proof slowly fades, leaving a fresh, clean aftertaste that invites another sip.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
