This exclusive Astor Batch is a showcase of the technical precision and ancestral wisdom found in the Miahuatlán region of Oaxaca. While most Espadín spirits are produced from the common Agave angustifolia, this expression utilizes the Penca Corta variant. Known for its shorter leaves and smaller size, this agave concentrates its sugars and minerals, resulting in a spirit with more tension and depth than a standard Espadín.

Produced under the Gusto Histórico banner, a collective dedicated to highlighting single-producer, traditional spirits, this "Agave Spirit" designation reflects a commitment to the liquid's heritage rather than industrial certification. It is a pure, unadulterated look at what happens when rare botany meets the legendary distillation skills of the Juárez family. 

Tasting Notes

  • Aroma: A sharp, clean opening of rain-soaked granite and limestone. As it opens up, the mineral notes give way to a bright sweetness of roasted pear, lime zest, and a savory hint of fresh oregano and bay leaf.
  • Palate: The mouthfeel is concentrated and vibrant. The "Penca Corta" agave delivers a punchy, sweet core of caramelized maguey that is immediately framed by a complex structure of white pepper, cooling eucalyptus, and a distinct saltiness.
  • Finish: The finish is exceptionally crisp and long. It lingers with a dry, stony character and a faint, refined smoke that feels more like incense than a campfire, allowing the herbal complexity to stay front and center.
