Gusto Histórico: Espadín, Madrecuixe, Bicuixe (Juárez)

The Soul of Miahuatlán in a Bottle

This ensemble is a masterclass in balance, crafted by the legendary Víctor Ramos in the district of Miahuatlán, Oaxaca. Clocking in at a robust 51.5% ABV, this expression represents the "Gusto Histórico", the historical taste, favored by the local community: high proof, complex, and deeply traditional. By blending the accessible sweetness of Espadín with the earthy, structured profile of wild Madrecuixe and the spicy, floral lift of Bicuixe, Ramos has created a spirit that is both a powerhouse and a delicate tapestry of flavors.

Tasting Notes

  • Aroma: An immediate hit of damp earth and roasted agave hearts. As it opens, expect bright floral notes of violet and orange blossom, underscored by a savory hint of leather and pine needles.
  • Palate: The entry is rich and oily. Initial flavors of caramelized tropical fruits (think grilled pineapple) give way to the mineral-driven "karwinskii" characteristics of the wild agaves, cedar wood, dry herbs, and a touch of black pepper.
  • Finish: Exceptionally long and resonant. The high ABV carries a clean heat that fades into a lingering sweetness of cocoa nibs and a faint, pleasant smokiness reminiscent of a dying campfire.

Why It Stands Out

This isn't just any spirit; it’s a snapshot of a specific place and time. Using Refrescadora (a cooling jacket on the still) during distillation allows Víctor Ramos to achieve a high alcohol content while preserving the delicate essential oils of the wild agaves. It is bold enough for the seasoned aficionado yet balanced enough to be the centerpiece of a serious tasting flight.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
