Gusto Histórico: Bicuixe (Juan Vázquez)

Elegance and Precision from the Miahuatlán Wilds

While many wild agave spirits lean into raw power, this expression from Maestro Juan Vázquez is a study in finesse. Harvested from the arid hillsides of Miahuatlán, the Bicuixe (Agave karwinskii) is known for its tall, slender stalk and concentrated sugars.

At 45.9% ABV, this mezcal sits in a "sweet spot", offering a more approachable entry point than some of the brand's high-proof monsters, without sacrificing an ounce of the complex, mineral-driven character that defines the region.

Juan Vázquez uses traditional methods, including underground stone oven roasting and copper pot distillation, to coax out the sophisticated botanical notes hidden within the agave's dense fibers.

Tasting Notes

  • Aroma: Soft and inviting. It opens with the scent of rain on hot stones (petrichor), followed by dried garden herbs, specifically thyme and rosemary, and a delicate hint of green apple skin.
  • Palate: Surprisingly creamy on the tongue. The flavors are remarkably focused, featuring bright citrus zest, cedar wood, and an intriguing salty-sweet quality reminiscent of salted caramel or olive brine.
  • Finish: Clean and snappy. It leaves a refreshing trail of peppermint and white pepper, with a subtle mineral dryness that keeps you coming back for another sip.

Juan Vázquez’s Bicuixe is a "thinker’s mezcal." It trades heavy smoke for a garden-fresh, mineral-forward profile that showcases the true terroir of the Oaxacan scrubland. It is an excellent choice for those who appreciate the structural beauty of Karwinskii agaves but prefer a spirit that whispers rather than shouts.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
