Produced in the rugged terrain of Santa Catarina Minas, Oaxaca, this 100% Destilado de Agave is a masterclass in ancestral distillation. Crafted by maestro mezcalero Reynaldo Altamirano, this specific "C&C Batch" showcases the unique character of the Barril agave (Agave karwinskii).

Unlike many modern spirits, this expression is produced using traditional techniques: the agave hearts are roasted in an underground stone pit, mashed by hand with wooden mallets, fermented with ambient yeast in open-top pine vats, and twice-distilled in clay pot stills. The result is a complex, textured spirit that honors the heritage of the Altamirano family.

Tasting Notes

  • Appearance: Crystal clear with high viscosity and slow-forming pearls (perlas) that indicate its traditional proof and rich essential oils.
  • Aroma: The nose opens with a strike of mineral "wet stone" and clay, characteristic of the Minas region. This is followed by deep, earthy notes of roasted agave, dried herbs, and a subtle hint of peanut shell. 
  • Palate: A robust and oily mouthfeel. Initial flavors of dark chocolate and roasted nuts give way to the green, vegetal snap of the Barril stalk. There is a distinct sweetness reminiscent of cooked sweet potato and caramelized brown sugar, perfectly balanced by the dry, earthy influence of the clay pot distillation.
  • Finish: Long, warm, and exceptionally clean. The finish lingers with a touch of black pepper, campfire smoke, and a final floral note of dried lavender.

As with all Cinco Sentidos expressions, this batch is uncertified "Destilado de Agave" to bypass the industrial constraints of the CRM, ensuring the spirit remains true to the producer's palate.

What is the difference between Tequila & Mezcal?
