Experience a truly unique expression of agave with Cinco Sentidos Colección Mixteca Edición 4, featuring Pizorra (Agave marmorata) distilled by Maestro Mezcalero Delfino Tobón Mejía. This special bottling is a journey into the heart of the mountainous Mixteca region, where traditional methods and rare agaves come together to create an extraordinary spirit.
Delfino Tobón Mejía, alongside friends and family, wild-harvested these magnificent, white-striped Pizorra agaves from the pristine outskirts of San Pablo Ameyaltepec, Puebla—a town whose name beautifully translates to "the mountain where water is born." This deep connection to the land is evident in every sip.
The agaves were meticulously roasted for four days in an underground conical pit oven, using tlahuicole firewood to impart a distinctive smoky character. After milling with a mechanical shredder, the agave underwent a natural fermentation with pure spring water for approximately one week. The resulting mash and tepache were then distilled just once in Delfino's custom-made, hybrid 3-plated copper still, a testament to his unique approach. The spirit is then carefully proofed with a blend of heads, hearts, and holanda, showcasing Delfino's masterful touch.

- Aroma: A captivating bouquet of sweet roasted agave immediately emerges, intertwined with subtle notes of earthy minerality and a hint of wet stone. Delicate undertones of anise and fresh herbs dance alongside a gentle, lingering smokiness that speaks to the tlahuicole firewood.
- Palate: The initial sip is a delightful revelation—a vibrant burst of cooked agave sweetness balanced by a distinct savory, almost briny character. Mid-palate, notes of black pepper and cinnamon appear, leading to a complex interplay of tropical fruit and a refreshing citrus zest. The unique distillation method contributes to a remarkably smooth and clean mouthfeel, with a subtle warming sensation.
