Cinco Sentidos Colección Mixteca Papalome Destilado de Agave

Immerse yourself in the authentic spirit of the Mixteca region with Cinco Sentidos Colección Mixteca Papalome, a truly unique destilado de agave. This extraordinary batch was crafted entirely from wild-harvested Papalome agave (Agave Potatorum) by the skilled husband-and-wife duo, Maestro Mezcaleros Atelo Ramirez and Laura Arriaga, in Los Reyes Metzontla, Puebla.

Atelo personally harvested 263 Papalome piñas from the Mixteca Poblana, then, with the help of friends and neighbors, roasted them for five days in an underground oven. They used mesquite as firewood and pirúl leaves for insulation, imparting deep, complex flavors. The cooked agaves were then meticulously crushed into a fermentable mash using traditional wooden mallets. This mash underwent a five-day dry fermentation before spring water was added, resulting in an additional 12 days of fermentation. Finally, Atelo and Laura slow-distilled the mash twice in their distinctive hybrid still, ingeniously crafted from galvanized steel, a clay pot, and a copper serpentine. This unique spirit was proofed by Atelo using a blend of heads, hearts, and tails, then rested in glass for a year before being bottled in June 2024. 

Tasting Notes:

  • Nose: Immediately captivating with earthy, mineral notes, intertwined with subtle hints of roasted agave, light smoke, and a unique floral complexity from the pirúl leaves.
  • Palate: A vibrant and robust profile unfolds, showcasing the untamed character of wild Papalome. Expect a delightful interplay of savory and sweet, with pronounced notes of white pepper, green herbs, wet stone, and a lingering subtle smokiness. Its rich texture provides a full-bodied experience.
  • Finish: Long and evolving, with a refreshing minerality, a whisper of smoke, and a clean, herbaceous fade that invites contemplation.

"La Colección Mixteca" is a special series of small-batch agave spirits, painstakingly curated from the rustic distilleries nestled in the mountainous Mixteca regions of Oaxaca and Puebla. Each bottling in this collection is a fascinating exploration of how maestro mezcaleros interpret and apply peculiar production methods and styles that have largely fallen out of favor in modern times, all while working with agave endemic to their specific region. A significant portion of sales from this collection directly supports Palenque improvement projects, contributing to the sustainability and preservation of these traditional practices.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
