Experience a captivating journey for your senses with the Cinco Sentidos Colección Mixteca Azul y Papalome, a truly exceptional destilado de agave. This classic ensamble, crafted by the masterful hands of Maestro Mezcalero Delfino Tobón Mejía in San Pablo Ameyaltepec, Puebla, beautifully unites the refined characteristics of cultivated Agave Azul (A. Tequilana Weber) with the intense, wild notes of Agave Papalome (A. Potatorum).
Delfino's meticulous process begins with a three-day roast in a brick-lined underground oven, utilizing mesquite and tlahuicole wood to imbue the agaves with deep, smoky nuances. After mechanical shredding, the cooked agaves undergo a dry fermentation for about two days, followed by an eight-day fermentation with the addition of pure spring water. The spirit is then distilled once in a unique hybrid, 3-plate copper alembic still, and proofed by Delfino using a blend of heads, hearts, and holanda. Distilled in February 2023 and bottled in June 2024, this expression is a testament to traditional artistry.
Tasting Notes:
- Nose: An alluring blend of cooked agave sweetness, hints of roasted nuts, and a subtle earthiness. Underlying notes of citrus and a delicate smokiness from the mesquite and tlahuicole wood emerge.
- Palate: The initial sweetness of the Agave Azul unfolds, quickly complemented by the vibrant, herbaceous, and mineral-driven intensity of the wild Agave Papalome. Expect flavors of green bell pepper, white pepper, and a touch of salinity, beautifully balanced by a persistent, elegant smokiness and a long, clean finish.

What is the difference between Tequila & Mezcal?
