Cambio Tequila Añejo is a testament to the harmony between tradition and intentional maturation. Crafted at the El Pandillo distillery, this spirit is the result of a precise, disciplined approach to aging that highlights the agave's character rather than masking it with heavy barrel influence. Master distiller Felipe Camarena utilizes the same high-quality highland agave and traditional tahona-milled foundation found in the younger expressions, allowing the liquid to mature with a structural integrity that remains uniquely expressive.
This añejo is aged for eighteen months in high-quality American oak barrels. By avoiding excessive time in the wood, the spirit maintains a vibrant backbone while developing the secondary and tertiary flavors that only patient, climate-controlled aging can impart. The result is a tequila that feels sophisticated, nuanced, and exceptionally balanced for those who enjoy a richer, more contemplative pour.
Tasting Notes
- Aroma: The nose offers a warm, inviting blend of toasted oak and sweet, cooked agave. Layers of dark brown sugar, cinnamon, and subtle notes of clove and nutmeg emerge with time in the glass, supported by a faint, nutty aroma of roasted walnuts.
- Palate: On the palate, the texture is luxurious and coating.
