Yola Mezcal Artesanal Pechuga

The Spirit of Celebration: A Rare & Refined Pechuga by Yola Mezcal

Experience the truly exceptional with Yola Mezcal Artesanal Pechuga, a special release that embodies the spirit of celebration and the meticulous craft of Oaxacan mezcal. Made from a harmonious blend of Espadín and Tobalá agaves, this pechuga is a testament to the ancestral knowledge and artistry upheld by the producers behind Yola Mezcal.

Handcrafted in San Juan del Río, Oaxaca, Yola Mezcal is rooted in a tradition passed down through generations. This Pechuga undergoes a ceremonial third distillation in a copper still, during which a raw chicken or turkey breast (pechuga) is suspended above the liquid. Alongside this, a medley of local fruits, nuts, and spices is typically added, imbuing the spirit with a profound complexity and a unique savory-sweet character. The result is a mezcal of incredible depth and refinement, perfect for special occasions and reverent sipping.

Tasting Notes

Yola Pechuga offers a sophisticated and evolving profile, balancing delicate fruit and floral notes with savory undertones, a hint of spice, and a clean, integrated smoke.

  • Aroma: Inviting and complex. Opens with bright notes of red berries (strawberry, raspberry) and delicate white flowers, beautifully intertwined with hints of roasted agave, almond, and a subtle savory herbaceousness. The smoke is gentle and well-integrated.
  • Palate: Smooth, elegant, and remarkably nuanced. The palate delivers a harmonious blend of sweet, cooked agave and bright, tart red fruit. This fruitiness is gracefully balanced by a delicate spice (white pepper, a touch of clove), hints of cured meat or poultry broth, and a clean minerality. The Tobalá contributes a floral complexity, while the Espadín provides a sweet, grounded base.
  • Mouthfeel: Silky and refined, with a smooth texture that coats the palate beautifully, making it exceptionally sippable.
  • Finish: Long, clean, and contemplative. It leaves a persistent impression of red fruit, subtle savory notes, a delicate spice, and a harmonious whisper of sweet smoke.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
