The juice then undergoes a minimum of 10 days of open-air fermentation, allowing wild ambient yeasts to impart a unique character. Double-distilled in a 1,000-liter, wood-fired copper pot still, this spirit is bottled pure, without any additives, ensuring an authentic expression of its terroir.
