Discover the high-altitude soul of Michoacán with the Caña Mayari expression from the legendary Pacheco family. While many are familiar with the standard Uruapan blend, this Single Agricole release is a pure, unaged tribute to a single heirloom sugarcane variety: Caña Mayari.
Grown at elevations exceeding 4,000 feet in iron-rich volcanic "Charanda" soil, this cane is harvested by hand and crushed using a century-old water-powered mill. The fresh juice undergoes a long, 10-day open-air fermentation with ambient yeasts before being double-distilled in "El Prieto," a historic wood-fired copper pot still. The result is a vibrant, terroir-driven spirit that bridges the gap between traditional Mexican aguardiente and the finest French Caribbean agricoles.
