Don Jatt Artisanal Ensamble: Coyote & Bicuixe

This rare expression from Tr3s Tiempos represents the pinnacle of artisanal agave spirits. Produced in an incredibly limited 36-bottle micro-batch, "Don Jatt" is a masterclass in balance, marrying the wild, rugged intensity of Coyote agave with the refined, floral elegance of Bicuixe.

Handcrafted in Oaxaca, this ensamble is a testament to patience and traditional heritage. Each bottle is individually numbered and encased in a hand-woven palm sleeve, honoring the terrestrial roots of the spirit.

Tasting Notes

  • The Appearance: The spirit presents a crystal clarity with high viscosity. In the glass, it leaves long, persistent legs, hinting at the rich oils and high proof within.
  • The Nose: The Bicuixe opens the experience with high-toned floral notes of gardenia and wet earth. This is quickly grounded by the Coyote's influence, which provides deep aromas of roasted nuts, caramelized agave, and a subtle, savory hint of leather.
  • The Palate: A powerful, full-bodied entry. The initial flavors are bright and mineral-forward, reminiscent of rain-slicked stones. As it develops on the mid-palate, the complexity of the "karwinskii" family shines through with notes of pine resin and dried herbs, balanced by the dark, chocolatey richness and smoke of the Coyote agave.
  • The Finish: The finish is exceptionally long and evolving. It transitions from a spicy peppercorn heat into a soft, lingering sweetness of cooked agave and vanilla bean.

This micro-batch is designed for the serious collector. Given the 36-bottle yield, it offers a fleeting glimpse into a specific moment of Oaxacan terroir that can never be exactly replicated.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
