Embracing the "Beloved Earth" philosophy, this sophisticated blend of Pinot Noir and Chardonnay is crafted using the traditional Champenoise Method, resulting in a sparkling wine of depth and finesse.  

Tasting Notes:

  • This Blanc de Noirs presents a transparent, clear, and bright appearance, showcasing a delicate straw yellow hue with subtle greenish flashes. A persistent medium-sized trail of fine beads gracefully rises, forming a lavish cordon de mousse on the wine's surface.  
  • The nose is elegant and fairly expressive, driven by delightful fruit-forward notes with prominent highlights of crisp pears, green apples, and zesty citrus.
  • On the palate, this sparkling wine is dry and fresh, offering an ample mouthfeel. Intriguing highlights of lees linger in the aftertaste, adding complexity. The elegant perlage contributes to a refined texture, leading to a satisfying medium finish.

  • It is then aged sur lies (on its lees) for 18 months in the cellar, allowing the development of its characteristic elegance and subtle complexity.
  • With a carefully balanced dosage of 16 g/L, this Blanc de Noirs offers a harmonious and dry yet subtly rounded finish.

However, due to the challenges of maintaining consistent temperature during shipping, we exclusively offer in-store pickup for our craft beers.
