Tepanal Espadín Capón: Ancestral Method Agave Spirit

Tepanal represents the pinnacle of traditional distillation. This Espadín Capón is not your standard agave spirit; it is a labor of time and patience. The term Capón refers to the practice of cutting the quiote (the flowering stalk) and allowing the agave to remain in the field for an additional year or more. This process forces the plant to concentrate all its sugars and complex energy back into the heart, resulting in a spirit with profound depth and a rich, oily texture.

Produced using the Ancestral Method, this spirit honors the ancient ways of mezcal making: roasted in earthen pits, crushed by hand or stone, fermented with wild yeasts in open vats, and distilled in traditional clay pots.

  • Palate: A luxurious, velvety mouthfeel. The Capón influence is immediate, offering concentrated flavors of caramelized agave, smoked paprika, and dark honey. The clay pot distillation adds a distinct, soft minerality.
  • Finish: Long, warm, and exceptionally smooth. It leaves a trailing taste of roasted nuts, dried tobacco, and a faint, sweet salinity. 

Tasting Tip:

Because of the clay pot distillation and the high proof, this spirit evolves significantly in the glass. Pour it and wait ten minutes; you will find the initial smoky notes soften, revealing a surprising tropical fruit sweetness.
