Tepanal Cuishito, Tobalá, & Arroqueño Ensamble
El Buen Comer Private Batch Ancestral Agave Spirit
This is an extraordinary and extremely limited Ancestral Agave Spirit from Tepanal, a true testament to the heritage of Oaxaca's Santa María Sola de Vega. This rare ensamble (blend) combines three prized wild and semi-wild agave varieties—Cuishito (a local variant of Agave karwinskii ), the highly sought-after Tobalá (Agave potatorum), and the long-maturing Arroqueño (Agave americana).
Crafted by the esteemed Maestra/Maestro Mezcalero Rafael García Aragón, this batch adheres to the most rigorous, pre-industrial techniques: the agaves are roasted in an underground conical oven, crushed by hand with wood mallets in a canoe (canoa), naturally fermented in open-air cypress vats, and distilled twice in small, traditional clay pots.
The resulting spirit is not merely a drink, but a profound cultural artifact - a complex, layered expression that beautifully balances the herbal, tropical, and earthy notes of its constituent agaves. It's a bottling for the dedicated enthusiast, a collector's piece that delivers a pure, unadulterated taste of the Oaxacan terroir and its ancestral craft.
Tasting Notes
- Appearance: Crystal clear with a full body and slow, elegant perlas (beading) that attest to its high proof and oil content.
- Aroma: Richly complex and evolving. Opens with the signature mineral and chalky earth notes of the clay pot. Hints of fresh herbs (like mint and sage) from the Cuishito and the distinctive sweet, tropical fruit and floral lift of the Tobalá. A core of deeply cooked agave provides a sweet, comforting anchor.
- Palate: Full and expansive on the tongue, with a powerful yet refined texture. Flavors of roasted pineapple, sweet cedar, and black pepper mingle with the earthy, slightly dry structure of the Arroqueño. The finish is surprisingly smooth for its proof, showcasing a beautiful integration of clay minerality and subtle smoke.
- Finish: Long, warming, and clean. Leaves behind a delicate blend of sweet spice, minty freshness, and a definitive mineral dustiness that confirms its ancestral distillation method.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
