Discover the essence of Chihuahua with Sotol Parejo Wheeleri, an exceptional spirit crafted by 4th-generation maestro vinatero Juan Fernández. This unique sotol is made in Madera, Chihuahua, using 100% wild Dasylirion wheeleri plants, which mature for approximately 15 years amidst the region's distinctive coniferous forests, humid summers, and cold, dry winters.
The harvested plants undergo a traditional process: they are roasted in a pit oven for three days and then milled with a mechanical shredder. After a seven-day fermentation, the sotol is distilled in a stainless steel alembic still, contributing to its distinct and refined character.
