San Matías Tahona Reposado 

Building on the artisanal foundation of the Tahona Blanco, San Matías Tahona Reposado is a masterfully aged expression that demonstrates how careful time in wood can elevate a traditional stone-crushed Highland spirit. After the estate-grown Blue Weber agave is cooked in brick ovens and crushed by the historic 1886 basalt stone tahona wheel, the juice undergoes open-air fermentation in wooden vats with its natural fibers. Following double distillation in copper pot stills, the liquid is aged for several months in a combination of white American oak and French oak barrels. The result is a deeply complex, full-bodied reposado that retains its vibrant Highland agave character while absorbing a rich, dessert-like barrel profile.

Tasting Notes

  • Appearance: A warm, inviting pale straw or spring pollen gold color with exceptional clarity and a dense, slow-tearing leg structure that signals its rich mouthfeel.
  • Nose: Incredibly nuanced and inviting, leading with warm notes of buttery cooked agave, toasted bread, and rich honey. As it opens up, layers of dark chocolate, vanilla bean, and soft caramel emerge, balanced by dried stone fruits, orange zest, and the classic wet-rock minerality characteristic of the San Matías terroir.
  • Palate: Silky and remarkably creamy on the tongue. An initial wave of sweet roasted agave and honeyed molasses is quickly joined by a bold punch of barrel spice. Distinct notes of cinnamon, clove, and allspice mingle with elements of toasted nuts, butterscotch, and a light touch of savory brine. The oak influence is present but beautifully integrated, allowing the rustic, fiber-fermented agave flavors to push through.
  • Finish: Medium to long with a warming, velvety presence. The sweeter notes of vanilla and caramel fade gracefully into a lingering finish marked by drying spices, cracked black pepper, and a final, elegant hint of orange peel.
