Salvadores Mezcal Destilado con Pechuga & Mole Coloradito

The Essence of Oaxacan Celebration in a Bottle. Salvadores Destilado con Pechuga and Mole Coloradito is a rare and ceremonial expression of mezcal that captures the true soul of Oaxaca. Produced in Tlacolula de Matamoros by Maestro Mezcalero Flavio Pérez Méndez, this spirit goes beyond traditional distillation by infusing the heart of Oaxacan cuisine directly into the process.

Starting with 8-year-old Espadín agave cooked in earthen pits and crushed by a horse-drawn tahona, the spirit undergoes a unique third step. During the second distillation in copper alembic stills, a turkey breast (pechuga) coated in a rich, homemade Mole Coloradito is suspended in the still's bell. The rising vapors cook the mole and turkey, stripping the oils and savory essences to create a mezcal of profound complexity, savory depth, and velvety texture. 

Tasting Notes

  • Aroma (Nose): A captivating and dense bouquet. Initial notes of sweet cooked agave and warm tobacco give way to the savory richness of the mole: think bitter chocolate, toasted almonds, and earthy spices like cumin and cinnamon. A whisper of smoke and roasted chiles grounds the sweetness.
  • Palate (Taste): Rich, oily, and full-bodied. The palate balances the sweetness of toasted caramel and dried fruit (raisins, plantain) with a distinct savory "umami" character derived from the turkey breast. Layers of sesame, ancho chile, and herbal thyme unfold mid-palate, creating a complex interplay between sweet and savory.
  • Finish: Long, warm, and incredibly smooth. The finish leaves a lingering impression of mineral earth, roasted nuts, and a gentle, spicy heat that recalls a traditional Oaxacan kitchen.

Serving Recommendation

Due to its savory complexity and ceremonial nature, this mezcal is best enjoyed neat in a wide-mouthed clay copita or crystal flute. Allow it to breathe for 10 minutes before sipping to fully open the aromas of the mole. It pairs exceptionally well with dark chocolate or orange slices dusted with sal de gusano.

What is the difference between Tequila & Mezcal?
