Salvadores Destilado con Cempasúchil

A Toast to the Spirit World: The Essence of Day of the Dead.

Salvadores Destilado con Cempasúchil is a vibrant and ethereal expression that captures the sacred aromatics of Oaxaca’s Día de los Muertos. Crafted in Tlacolula de Matamoros by Maestro Mezcalero Flavio Pérez Méndez, this seasonal release bridges the gap between the living and the spiritual through the infusion of the Cempasúchil (Marigold)—the iconic orange flower used to guide spirits home.

The foundation is a robust 8-year-old Espadín agave, roasted in earthen pits and crushed by a horse-drawn tahona. During the final distillation in copper alembic stills, fresh Cempasúchil flowers (and often a touch of seasonal citrus) are added to the still. The resulting spirit is not merely a mezcal, but a "vegan pechuga" style distillate that is exceptionally bright, floral, and distinctively Oaxacan, offering a sensory journey similar to walking through a flower market in November.

Tasting Notes

  • Aroma (Nose): Intensely aromatic and evocative. It opens with a burst of freshly cut grass and citrus blossoms, quickly followed by the unmistakable, musky-sweet scent of marigold petals. Underneath the floral top notes lies a grounding layer of sandalwood, pine resin, and a whisper of wet earth, reminiscent of a morning ofrenda.
  • Palate (Taste): Silky, coating, and lively. The texture is buttery and oily, delivering flavors of lemongrass, orange peel, and sweet cooked agave. The floral character of the Cempasúchil blooms mid-palate, bringing a soft, herbal complexity that balances the spirit's natural minerality.
  • Finish: Long, tingling, and refreshing. The finish leaves a lasting impression of citrus zest and herbal tea, with a clean, dry fade that invites another sip.

Serving Recommendation

This mezcal is a celebration of delicate aromatics and should be enjoyed neat in a wide glass to allow the floral bouquet to disperse. It is the perfect accompaniment to celebratory toasts or quiet reflection. Pair it with light, citrus-forward dishes like ceviche, orange slices with worm salt, or a slice of Pan de Muerto.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
