Rufina Maguey Espadín is a high-quality agave spirit from Espadín agave plants harvested at 7-8 years. It undergoes a traditional production process, including extraction with a machete and shredder, horizontal distillation in a copper still pot, and cooking in a conical oven with various kinds of wood. Fermentation uses native yeast and water from basins and cypress wood vats.
Rufina's final product is a testament to the dedication and craftsmanship of the community, with each small batch (ranging from 120 to 250 liters) reflecting the unique qualities of the agave and the season in which it was distilled. Everything is produced, bottled, and shipped directly from San Luis Amatlan, Oaxaca, ensuring the integrity and exceptional quality of each Rufina's artisanal spirits sip.
Every bottle includes a scapular, providing divine protection for those who may indulge a little too much.
