A Glimpse into the Soul of Oaxaca's Terroir From the skilled hands of Simeon Ramirez in San Agustin Amatengo, Oaxaca, comes this exceptional expression of Rezpiral's commitment to artisanal mezcal. This Tobaziche mezcal is a testament to the magueyero's deep understanding of the land and its gifts. Tobaziche (Agave Karwinskii) is known for its long, cylindrical stalk that can take a decade or more to mature, and its distinctive, often complex, flavor profile. This spirit is a pure reflection of the agave and the land it grew on.
Simeon Ramirez, in partnership with his father Apolonio, carries on a multi-generational legacy of traditional mezcal production. The agaves for this batch were cooked in a conical earthen oven and milled using a traditional tahona, a stone wheel pulled by an ox, before being fermented and distilled. The resulting mezcal is a vibrant spirit that showcases the unique characteristics of the Tobaziche agave.
Tasting Notes:
