This Series 8 release from Maestro Simeon Ramirez is a sophisticated exploration of the Karwinskii family. By blending Tobaziche and San Martinero, two agaves known for their tall, tree-like stalks and intense structural complexity, Simeon has created a spirit that is both ruggedly terrestrial and elegantly refined. 

At 50.4% ABV, this ensemble is a high-octane journey into the heart of San Agustín Amatengo. The inclusion of San Martinero, a rarer, often more elusive member of the Karwinskii family, adds a layer of dark, savory depth to the bright, herbaceous profile of the Tobaziche. 

Tasting Notes

  • Aroma: A striking, "green" aromatic profile. Initial notes of cedar chest, dried hay, and snapped twigs are layered over a base of roasted agave sweetness. As it opens, you’ll detect hints of sourdough starter and a subtle, dusty minerality.
